Job Description


Cloudy Bay is looking for an Executive Chef for Fixed-Term 1 Year Contract, to launch and refresh the restaurant for the upcoming 2022/2023 season. Working alongside the Brand Experience Manager and the hospitality team the Executive Chef will play a key role supporting the team to review and refresh the restaurant whilst assisting in designing and executing the vision for Jack’s Raw Bar and private experiences.

As a major element of our visitor experience, we are looking for an Executive Chef who aligns with our values and wants to grow and represent the brand from a culinary perspective whilst continuing to develop the business for longer term growth.

The Executive Chef will also be responsible for designing and hosting Epicurean dinners at 'The Shack' taking our clients on a food and wine journey assisting to tell the Cloudy Bay story with food and wine matches along with other private event offerings.

You will have the opportunity to create your own menu, showcasing the beauty of food and wine, use seasonal and local products which lends perfectly to the Cloudy Bay wine experience. Bring your food experience and exceptional customer service ability to create authentic gastronomic experiences for our guests.

In this role we’re seeking an enthusiastic and experienced Executive Chef with passion and energy to contribute to the reputation of Cloudy Bay and to enhance the overall customer experience. Jack’s Raw Bar is set up outside as an open kitchen and involves facing and interacting with customers as you work. We are open seven days a week for lunch and some special dinner events when required, so successful applicants will need to be available to work flexible hours including weekends and public holidays from the beginning of October 2022 through to end of September 2023.

Main responsibilities will be, but not limited to:

  • Develop a short/long term vision for the food and beverage offerings at Cloudy Bay
  • Operation of the kitchen side of the food and beverage offerings at Cloudy Bay sites
  • Work within the agreed operational budgets
  • All aspects of menu design, supply, budgeting and reporting
  • Hire and manage the kitchen staff
  • All aspects of health and safety and food hygiene practices for the kitchen(s)
  • Provide ongoing training, mentoring and assistance for the hospitality team
  • Responsible for ensuring kitchen and front of house is staffed for all agreed services
  • Implement, lead, and assist with daily briefings for the hospitality team
  • Continue to build the brand profile through the food and beverage offerings
  • Deliver exceptional customer service to all visitors of Cloudy Bay

Requirements

The ideal Candidate will have:

  • 5 years’ experience at Executive Chef level or higher in high end, quality leading establishments
  • Achieved at least 1 cuisine hat rating here in NZ
  • An understanding of the Marlborough hospitality industry
  • Experience in hosting private dinners
  • Experience in designing and delivering exceptional high quality cooking classes
  • A basic understanding of the French Language is desirable
