Who We Are / Ko Wai Matou

Sudima Kaikoura is a new 4.5-star hotel on the esplanade of Kaikoura's waterfront, conveniently located at the end of the town centre. The hotel has spectacular 360 views of the seaward Kaikoura mountain range, waterfront and peninsula and proudly presents large scale, local Maori artwork throughout the hotel, with a high quality fit-out, 120 well-appointed rooms, restaurant, bar, conference facilities and infinity pool.

The Role | Te Mahi

We have an exciting opportunity for an experienced Head Chef to join the new Sudima Kaikoura hotel, due to open in October 2022. The successful candidate will have experience in a senior kitchen role and be a qualified Chef with more than six years of culinary experience and a minimum of two years as a Sous Chef or above.

You will run a well organised kitchen and be fully conversant with Food Control plans, health and safety and hygiene. We appreciate and value every one of our team members, and the person in this position will demonstrate true leadership skills by encouraging and supporting the team through their chosen career. Ideally you will have experience in a similar role, a desire to exceed our diners expectations and have a great knowledge of beverages. This is a hands on leadership role that requires the ability to remain calm under pressure whilst leading a busy restaurant and conference kitchen to deliver food service.

Responsibilities | Nga haepapa

  • Organise the kitchen service operations on a day to day basis so that they run efficiently and productively
  • Be pro-active in controlling food and manning costs being fully aware of forecasted business and targeted profitability whilst maintaining standards
  • Work with restaurant Chef Consultants on concept ideas, menus and develop, prepare and produce recipes, focusing on sustainable and locally sourced produce
  • Maintain a sound knowledge of the hotel’s procedures for purchasing of food stocks, the control of purchasing levels
  • Train and develop junior chefs and kitchen assistants
  • Ordering of kitchen equipment and supplies
  • Manage the Food Control Plan and licensing
  • Foster an environment of cooperation and respect between co-workers

Requirements

  • 2 years minimum Sous Chef or higher experience in modern, successful restaurants
  • Excellent range of experience with multiple cuisine types
  • Passion for developing innovative menus with exceptional presentation and delivery
  • Expert in product quality and attention to detail in the food produced
  • Outstanding communication and leadership skills
  • A solid understanding of managing costs
  • Understanding of current culinary trends and kitchen processes
  • Working knowledge of NZ Hamp;S legislation (Health and Safety at Work Act 2015)
  • Valid Right to Work in NZ
