Job Description


An exciting opportunity awaits an outstanding Head Chef to manage the production of creative and innovative gourmet meals for our Vices amp; Virtues Restaurant and Bar, designed by the award winning designer Rachel Luchetti.


Adjoining a luxury accommodation complex, the 100 seat Vices amp; Virtues is a busy gourmet affair and we are looking for a creative, inspirational leader who is keen to deliver on the latest and greatest food trends for our a la carte menu offerings for breakfast, lunch and dinner and small conference and meeting events.


This is a hands on role in an open kitchen environment which requires excellent kitchen management skills.

You will be expected to manage a busy kitchen team to ensure the delivery of exceptional service.


Responsibilities include but are not limited to :

  • Creative menu design and planning using local produce/suppliers
  • Leading a passionate kitchen team
  • Management of food control plans
  • Effectively managing Pamp;L
  • Managing ordering and costs with food suppliers
  • Training and development of junior kitchen team members
  • Implementing exceptional quality standards and addressing any problems or complaints
  • Planning and directing food preparation and culinary activities

Requirements

  • Minimum 3 years experience as a Head Chef in a 5 star busy a la carte operation and experience with plant based cuisine
  • An engaging personality with the skills to interact with customers/guests
  • Experience in the management of food control plans
  • Ability to spot and resolve problems efficiently
  • Capable of planning and delegating multiple tasks
  • Open communication and leadership skills
  • Passionate about cooking trends and best practices
  • Working knowledge of various computer software programs (e.g. MS Office, micros etc)
  • Qualified culinary degree/certificate
